Egg-Free, Gluten-Free Meatballs

These egg-free, gluten-free meatballs use grated potato and carrot instead of eggs and breadcrumbs to bind the mixture and keep it moist. Made with pork, fresh herbs, and olive oil, they're baked rather than fried — and naturally suitable for anyone avoiding gluten or eggs.
This dish has been part of my childhood memories, as it was a common food in Cypriot households. Unfortunately, due to my inflammatory bowel disease, I was not able to eat this dish because the traditional recipe contained eggs, breadcrumbs, and spices.
Since I enjoyed cooking from a very young age, I began thinking about what alternative recipe I could try in order to be able to enjoy this dish together with my family. Thus, I started exploring what difference it would make if I did not include eggs and breadcrumbs at all. The result was that the meatballs became dry. Then I thought, since potatoes have always been one of my main foods, why not replace these two missing ingredients with potato? Specifically, I grated the potato so that it would mix well with the minced meat. I then replaced the spices with natural green herbs. The result was fluffy meatballs that were delicious and healthy, as they were cooked on the grill with olive oil rather than fried.
I started making meatballs without eggs and breadcrumbs out of necessity, but now I actually prefer them this way.

Ingredients

  • 325 gr minced pork
  • 1 large carrot
  • 1 large potato
  • 2 tbsp olive oil
  • sea salt
  • oregano

Instructions

  • Preheat the oven to 180°C.
  • Grate the carrot and potato using the fine side of a grater.
  • In a bowl, add the ground pork, grated carrot and potato, olive oil, salt, pepper, and oregano. Mix well until you have a uniform mixture.
  • Shape the mixture into meatballs.
  • Place the meatballs on a baking tray lined with parchment paper and bake for 35 minutes.
  • Remove the tray from the oven, turn the meatballs over, and bake for another 5–10 minutes, until they are golden brown on the other side as well.
  • Remove the tray from the oven and serve.
