MOCHI filled with fresh apples

It is famous for its dense chewy texture, mild sweetness and colorful appearance.This particular recipe is prepared in a microwave using a simple mixture of glutinous rice flour, apples, honey and water. These mochi are filled with baked apple and are a juicy and chewy bite.It is a delicious and unique dessert that I am sure you will enjoy 😋
Ingredients
MOCHI
- 1,5 – 2 Tbsp honey
- 2 Tbsp water
- 1 pinch salt
- 3,5 cup glutonious rice flour
For coating
- Tapioca starch
Filling
- 1 apple
- 1/3 cup water
- 1 Tbsp olive oil
Instructions
- Use a large microwave-safe bowl.
- Peel the apple and cut it into cubes. Pour it into the pan with 1 tbsp. oil and stir fry for a while. Then pour 1/3 cup water and simmer until they come to a good boil. Then put it in the blender to develop a creamy filling. Put the mixture in the refrigerator to cool.
- Add the honey, a pinch of salt and water and mix well. Then, add the glutinous rice flour and mix well. Once there are no signs of flour cover the bowl with a cover/ or plate (safe in the microwave).
- Put the mixture in the microwave for 1 minute. Take it out and mix it well. Cover and microwave for another 1 minute. The mixture should have a creamy texture (like ice cream) without any other traces of flour.
- Once the mochi is baked, transfer it to a tray lightly sprinkled with tapioca starch (so it doesn't stick). Be careful not to burn, sprinkle your hands with tapioca starch, divide it into 8 parts and fill them with the apple filling and then close them – shape of a ball.
- Mochi – ready to eat! 😋
