The Idea behind the Blog

My name is Nicole and I have a short gut syndrome with angiodysplasia.

I have a variety of food intolerances. Specifically, I have intolerance in lactose, dairy, gluten, wheat and grain, eggs, legumes, acids and in most vegetables and fruits (including those containing seeds). Additionally, my food intolerances cover also nuts, hot spices, artificial sugar and all products containing preservatives.

The goal is to publish the recipes and the different combinations that I create with pure ingredients. The aim is to show to other people, with similar health problems and food intolerances/ allergies, amazing recipe ideas that are healthy and tasty.

Ever since I can remember, I had a passion for cooking. I grew up in an environment full of flavors and aromas of gastronomy. My dad is a chef with awards from cooking and gastronomy competitions. He also, has a lot of experience from working in hotels, restaurants, catering and now he owns a cooking school. Also, my mother has years of professional experience in F&B operations. So it didn’t take long for me to get enhanced in the magic world of quality cooking.

Therefore, I begun to test my skills in the kitchen while also researching the market to find new products accessible to my own dietary preferences. And so, I have been experimenting with ways of cooking using fresh ingredients that would offer me flavor and aroma. Over the years, watching my dad, my mom and my grandma cook delicious meals, I became more and more familiar with different methods of cooking. I came up with new recipes or similar to the existing ones, adapting them, strictly to my own dietary restrictions.

In other words, following the words of the great American chef Thomas Keller: ”A recipe has no soul. You, as a cook, have to bring the soul to the recipe.” That’s exactly what I’m trying to do. To adapt the soul of my eating disorders in my food.

If someone studies my food intolerances, which I admit are not few, they will wonder what does this girl eat ??? This blog will present recipes that more or less will remove any doubt. When I cook, I focus on the foods that I am allowed to eat, experimenting also alternative ways of cooking and ingredients that will give me the same or even better result of texture, aroma and taste in the recipe. Also, I am always researching for substitutes of different food products such as, eggs and dairy.

The idea of creating this blog, came up many times throughout the years, by my loved ones. However, it was that one rainy day, when the idea of creating an online blog sparked in my mind. Such effort, required not only cooking and creativity, but also programming and web development knowledge. So with the help of my partner George, who is an expert in this field, we put to motion the creation of this blog.

My name is Nicole and I will take you on a journey to a different and alternative world of cooking!
